1. Pre-heat oven to 220 ºC with oven shelf one-above centre position. 2. Spread tomato pesto across one side of each pita bread. 3. Scatter smoked salmon, onion rings and capers across the tops. 4. Generously top with the 3- cheese mix, and bake directly on the oven-rack for 6 minutes. 5. Serve immediately sliced in 4 triangles to make 24 triangles.
A mixture of grated cheddar and mozzarella cheese will suffice, if you are unable to source the special 3-cheese mix referred to in this recipe. Recommended accompaniment: SPAR low-fat salmon-flavoured cream cheese Recommended wine: a young Merlot
