Quick Butter Chicken Jaffle Recipe
Take a ready cooked Chikka chicken, add some spices and a buttery coconut sauce and you have the makings of a butter chicken jaffle in minutes!
Recipe Ingredients
- 30 ml SPAR olive oil
- 1 SPAR Freshline onion, finely chopped
- 2 cloves SPAR Freshline garlic, finely chopped
- 30 ml ground cumin
- 45 ml roasted masala
- 410 g can SPAR tomato puree
- 410 g can coconut milk
- 1 Chikka Chicken cooked chicken, flaked from bone
- salt and freshly ground black pepper
- 20 slices SPAR Bakery white bread
- 120 ml softened SPAR butter
- SPAR plain yoghurt to serve
Recipe Method
- Heat oil in a large pot. Add onion, garlic and spices. Stir-fry for 3-5 minutes or until aromatic.
- Add tomato and coconut milk. Stir through and lower heat. Allow to simmer for 10 minutes, or until liquid has reduced by half.
- Add chicken and season with salt and pepper. Mix through. Spread one side of each slice of bread with butter.
- Place one slice at a time in jaffle iron, buttered side facing down. Spoon chicken filling on top.
- Place second slice of bread on top, buttered side facing up. Close iron and trim off excess bread. Fry over low heat for 2-3 minutes per side, or until golden brown.
- Remove from iron and make more jaffles with the rest of the bread and filling.
- Serve warm with yoghurt.
