Bean and Avocado Wraps Recipe

An inspirational and healthy light meal idea that mixes cannelini beans, avocado and crunchy coleslaw mix with cheese for a taste sensation.

Recipe Ingredients

  • Splash SPAR Extra-Virgin Olive Oil
  • 1 packet SPAR Freshline dry-coleslaw
  • 1./2 bunch fresh dhania
  • 1 can SPAR Cannellini Beans, drained
  • 2-pack SPAR Freshline Ripe&Ready Hass avocado pears
  • 375 ml SPAR grated cheddar cheese (150 g)
  • 1 medium onion, grated
  • seasoning to taste
  • 4 SPAR Freshline large wraps

Recipe Method

1. Lightly and briefly stir-fry the slaw mix with a splash of olive oil.

  1. Mash beans and avocado together with a potato masher or fork. Add in the cheese and onion. Season to taste.
  2. To assemble the wraps, warm them in the microwave oven as per on-pack instructions.
  3. Spread each one generously with the bean mixture, and scatter over the coleslaw.
  4. Roll up firmly, and cut each wrap in half diagonally to serve.
     

Hints & Tips

  • A sprinkling of biltong slices can add a meaty flavour if you want.
  • To use these as dainty cocktail snacks, roll each completed wrap individually in cling film, chill, then slice using an electric carving knife for neatness.
