Mother's Day Breakfast Recipe

Spoil mom on her special day with a scotch pancake served with sweet cream cheese and pears.

Recipe Ingredients

  • 200 g block Kiri cream cheese
  • 2 ml vanilla essence
  • 25 ml SPAR icing sugar
  • +- 125 ml SPAR Breakfast Crunch
  • 30 ml SPAR butter
  • 50 ml SPAR brown sugar
  • dash balsamic vinegar
  • 410 g can SPAR pear halves, drained and halved lengthwise
  • 1 FRESHLINE Scotch pancake, cut into a star shape with SPAR Good Living cookie cutter

Recipe Method

  1. Using a fork, gently mash the cream cheese, icing sugar and essence together.
  2. Roll this mixture into large marble-size balls, and roll each one in the cereal to coat thoroughly.
  3. Heat butter and brown sugar together in a SPAR Good Living non-stick pan, stirring until the sugar dissolves. Add in the vinegar and bring to the boil. Add in pear slices, and simmer briefly, until browned on both sides, without over-cooking them.
  4. Arrange the pears on the edge of the crumpet, with yoghurt balls placed around on the plate.

Hints & Tips

  • Do not substitute the cream cheese for the softer version of cottage cheese, as it will be too difficult to handle for rolling.
  • Do not substitute the Balsamic vinegar with any other vinegar; if you have to substitute, then use maple syrup mixed with a little lemon juice instead.
