Luxury Banoffee Bake Recipe

A delicious twist on a traditional Bread and Butter pudding recipe using banana loaf instead of bread and a sweet caramel custard for a rich and satisfying pudding.

Recipe Ingredients

  • 1 SPAR Freshline banana loaf
  • 1 large ripe banana, peeled and sliced
  • 64 g box cream caramel sweets, roughly chopped
  • 250 ml SPAR vanilla custard
  • 1 large SPAR egg
  • 125 ml SPAR fresh cream

Recipe Method

  1.  Lightly grease a medium oven-dish.
  2. Peel away and discard the paper casing from the banana loaf. Slice the banana loaf in half down the length, then into 1 cm slices and layer them in overlapping rows, into the oven dish.
  3. Tuck the banana slices and sweets deeply in amongst the rows of banana loaf.
  4. In a bowl, combine the custard, egg and cream using a hand-whisk or fork.
  5. Pour this over and in-between the oven-dish ingredients, and set aside so it can settle while the oven heats up to the required temperature of 190 º C.
  6. Cover lightly with a sheet of foil and bake for 25 minutes. Remove the foil, and bake a further 10 minutes until the dessert is bubbling and the protruding banana loaf tips are crusty. Serve while very warm.

Try swopping the vanilla custard for the SPAR fresh chocolate custard.
