Sugar 'N Spice Biscotti Recipe

Recipe Ingredients

  • 3 large SPAR eggs
  • 250 ml SPAR white sugar
  • 125 ml SPAR sunflower oil
  • 810 ml SPAR cake flour (3 ¼ Cups)
  • 15 ml baking powder
  • 5 ml ground ginger
  • 8 ml mixed spice
  • 2 ml ground cinnamon
  • pinch salt

Recipe Method

  1. Preheat oven to 190º C. Lightly grease a baking sheet.
  2.  Whisk the eggs and slowly beat in the sugar and oil to a thick foamy mixture.
  3.  Blend in the remaining ingredients.
  4. Turn the dough onto a lightly floured worktop and knead to a smooth putty-like dough.
  5.  Divide and roll the dough into 3 x 30cm length logs. Roll each log in cinnamon sugar until well coated, and place them on the prepared baking sheet. Press down gently to slightly flatten each roll down their length.
  6. Bake for 25 minutes. Remove and set aside to cool slightly, while the oven reaches a reduced temperature of 150 ºC.
  7.  Diagonally slice off 1 cm wide biscotti. Place them cut-side down on the baking sheet and bake for 10 minutes. Turn each one over, and bake for a further 5 - 8 minutes until they are dry and crisp but not overdone.

Hints & Tips

Consider baking two or three batches of this recipe to make it economical on time and electricity. They can be frozen, so don't feel concerned about such a large batch remaining fresh.
An electric carving knife helps achieve perfectly even slices.
