Warm Lentil Salad Recipe

The combination of smoked chicken, feta and lentils with a tomato and garlic dressing makes for a delicious warm salad that's great with fresh rolls as a light lunch.

Serves: 4 - 5

Recipe Ingredients

  • Splash SPAR olive oil
  • 1 medium red onion, finely chopped
  • 200 g smoked chicken, roughly chopped
  • 200g punnet SPAR Freshline mini plum tomatoes, halved


  • 2 cloves garlic
  • 5 ml ground cumin
  • 10 ml SPAR Balsamic vinegar
  • 20 ml SPAR olive oil
  • 1 can SPAR lentils in tomato puree and brine, partially drained
  • 1 round SPAR black pepper feta cheese, cubed

Recipe Method

  1. Warm the oil in a pan and gently sauté the onion and chicken until cooked.
  2. Pour on the dressing ingredients and the tomatoes, and cook briefly, shaking the pan to keep the ingredients loose.
  3. Toss in the lentils and feta cheese and reheat. Serve immediately.

Hints & Tips

No need for salt and pepper as these are taken care of from the content in the lentils, chicken and feta cheese.

Recommended wine: light red or white
