Falafels Recipe

Making your own falafels isn't as difficult as you might think. Try these crammed into a fresh pita and drizzled with Tzatziki.

Recipe Ingredients

  • ​1 can SPAR Chickpeas, drained
  • 1 small onion, finely diced
  • 1 clove garlic, crushed
  • 2 Tbsp SPAR Olive Oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 Tbsp chickpea flour
  • A handful of fresh parsley, chopped
  • Salt and freshly milled pepper
  • Olive oil (for pan-frying)

For the Tzatziki

  • 1 cup SPAR Double Cream Plain Yoghurt
  • ½ cucumber, grated
  • Salt and pepper to taste
  • A handful of fresh mint (and extra for serving)

For Serving

  • ½ red onion, thinly sliced
  • 6 butter lettuce leaves, shredded
  • 6 whole-wheat pita breads

Recipe Method

  1. Mash the chickpeas with a fork.
  2. Fry the onion and garlic in two tablespoons oliveoil until soft and cooked (for ±10 minutes). Add the cumin and coriander and cook for another minute.
  3. Add to the mashed chickpeas.
  4. Add the rest of the ingredients and mix well.
  5. Shape into balls the size of ping pong balls.
  6. Fry in a little oil (± two tablespoons) over mediumheat, until cooked on each side (for ±3 minutes per side).
  7. For the tzatziki: mix the yoghurt, cucumber and chopped mint and season well with salt and pepper.
  8. Toast the pitas and fill generously with tzatziki,lettuce and falafels.
  9. Top with red onion and more fresh mint.
