Smokey Italian Sausage and Bean Stew Recipe

Juicy pork sausages and spicy chorizo stewed with paprika, peppers and butter beans for a hearty meal.

Recipe Ingredients

  • 2 Tbsp sunflower oil
  • 1 onion, finely chopped
  • 2 medium sticks of celery, finely chopped
  • 1 yellow pepper, chopped
  • 1 red pepper, chopped
  • 3 fat cloves of garlic, chopped
  • 1/2 link chorizo sausage, sliced
  • 6-8 SPAR Pork Sausages
  • 1 tsp sweet smoked paprika
  • 1/2 tsp ground cumin
  • 2 tsp thyme leaves
  • 1/2 cup white wine
  • 1 can SPAR Diced Tomatoes
  • 1 can SPAR Butter Beans, drained and rinsed
  • 1 bunch of chives, snipped (optional)

Recipe Method

  1. Heat 2 Tbsp sunflower oil in a large saucepan and cook the onion for ±5 minutes. Add the celery and garlic and cook for 3 minutes.
  2. Add two finely chopped medium celery sticks, one chopped yellow pepper and one chopped red pepper and cook for another 5 mins.
  3. Add the chorizo sausages and pork sausages and fry for 5 minutes.
  4. Add the paprika, cumin and thyme and cook for a minute.
  5. Add the wine, tomato and thyme leaves to simmer for 10 minutes.
  6. Add the beans and season well with salt, pepper and a little sugar. Simmer for another 5 minutes.

Hints & Tips

Serve with Portuguese rolls or mash potatoes.
