Seafood Symphony Recipe

A twist on the traditional paella using convenient ingredient choices available in SPAR stores, for an all-on-one dish cooked and served in an electric frying pan.

Recipe Ingredients

  • 25 ml SPAR olive oil
  • 2 large garlic cloves
  • 2 medium onions, sliced
  • 1 medium green pepper, sliced in strips
  • 500 g SPAR long grain parboiled rice
  • ½ a 410 g can Spanish-style tomatoes
  • 2 chicken stock cubes dissolved in 1 litre boiling water
  • 5 ml turmeric
  • 1 whole cooked chicken from the Deli counter, neatly portioned
  • 1 can SPAR oysters, drained well
  • 200 g SPAR whole frozen prawns
  • 12 frozen mussels in the ½ shell
  • 1 frozen calamari steak, slivered
  • 1 Chorizo sausage, thickly sliced
  • 150 g SPAR frozen green peas
  • 1 pouch SPAR Calamata black olives, drained
  • Salt and pepper to taste

Recipe Method

  1. Using a SPAR Good Living electric frying pan, warm the olive oil on low and gently fry the onion, garlic and peppers together until tender.
  2. Add in the raw rice and toss to coat the grains with oil.
  3. Pour on tomato, hot stock and turmeric, stir and cook on medium heat with the dome lid on, until the rice is cooked and most of the liquid is absorbed. (Add additional stock during cooking, only if really necessary)
  4. Add in the remaining ingredients, and steam with the lid on, for 10 minutes. Check seasoning.

Hints & Tips

If you prefer a less spicy sausage, substitute with 125 g SPAR streaky bacon or TENDER and TASTY pork chipolata sausages, and fry in Step 1 in the above method.
