Sardine Bombs Recipe

Turn a humble can of sardines in tomato sauce into a culinary salad feast with a few additional ingredients.

Recipe Ingredients

  • 1 can SPAR Sardines in tomato sauce, drained and bones removed
  • 1 small onion, finely diced
  • 1 Tbsp SPAR sunflower oil
  • 1/2 cup fresh breadcrumbs
  • handful of fresh coriander, chopped
  • 1 egg, beaten
  • salt and pepper
  • oil (for frying)

For serving

  • Butter lettuce
  • Sweet chilli sauce
  • Lemon wedges
  • Fresh basil/coriander

Recipe Method

  1. Cook the onion in the oil until golden and soft for 8 minutes.
  2. Leave to cool.
  3. Break the sardines up with a fork and add remaining ingredients. (including onion). Season well.
  4. Roll into balls that are slightly smaller than a table tennis ball.
  5. Heat oil in a large non-stick pan and cook the fishcakes for 3 minutes per side.
  6. Serve in lettuce cups with sweet chilli sauce and fresh basil or coriander.
