Roasted Butternut and Clementine Salad Recipe

Roast butternut sprinkled with citrus slices and pistachio and drizzled with a creamy tahini and honey dressing.

Recipe Ingredients

  • 2 SPAR Freshline butternuts, peeled and sliced into half-moons
  • Olive oil, to drizzle
  • Salt, to taste
  • 4 SPAR Freshline Clementines, peeled and sliced
  • Chopped toasted pistachio nuts
  • 125ml SPAR plain yoghurt
  • 45ml tahini
  • 15ml SPAR honey

Recipe Method

  1. Preheat the oven to 180°C. Add the butternut to a roasting tray and drizzle with olive oil and salt. Roast in the oven until tender and golden, about 45 minutes.
  2. To assemble the salad, place butternut on a serving dish along with the clementine slices. Sprinkle with pistachio nuts, and drizzle with olive oil.
  3. Stir the yoghurt, tahini and honey together in a small bowl and season with salt to taste. Drizzle over the salad to serve.
