Chick Pea and Bacon Salad Recipe

A salad meal in one that's perfect for a picnic. It can be served by itself or with couscous for a more substantial meal.

Recipe Ingredients

  • 250 g SPAR rindless smoked streaky bacon
  • 5 ml cumin seed
  • 1 can chick peas, well drained
  • 1 bunch Freshline spring onions, chopped
  • 2 medium Freshline carrots, peeled
  • 2 sticks celery, chopped
  • ¼ bunch fresh dhania, chopped
  • salt and ground pepper to taste

Pack separately for a picnic

  • 1 small ripe avocado pear
  • 100g tub orange yoghurt

Recipe Method

1. Twist each bacon rasher several times, and oven-grill for 4 minutes until browned crisp. Set aside to cool.
2. Dry-roast the cumin in a small pan for 3-4 minutes over medium heat. Lightly crush it using a pestle and mortar.
3. Using a wide peeler, peel off ribbons from the carrots.
4. Lightly combine the salad ingredients, except the avocado pear and yoghurt. Season to taste.
5. At serving time, peel and dice the avocado pear into the salad ingredients, and mix in the yoghurt.
