Strawberry, Lime and Coconut Panna Cotta Recipe

A smooth and creamy dessert, perfect for a summer evening.

Recipe Ingredients

  • 1 can (400ml) SPAR coconut milk
  • ½ cup (125ml) cream
  • 1 punnet (250g) SPAR Freshline strawberries - blend 2/3 of the punnet and keep the rest for serving
  • ⅓ cup (80ml) SPAR sugar
  • Zest of 1 SPAR Freshline lime, finely grated
  • 1 sachet (10g) powdered gelatine

Recipe Method

  1. Pass the blended strawberries through a sieve – discard the pips
  2. Soak the gelatine in ¼ cup coconut milk for 10 minutes
  3. Heat the cream, lime zest and sugar together to just-boiling, and stir the soaked gelatine through and pass the mix through a sieve
  4. Add the coconut milk and strawberry purée
  5. Pour into 4 ramekins
  6. Refrigerate for at least 4 hours or overnight
  7. Serve with remaining strawberries and mint if you like
