Ginger Butternut Bake Recipe

This sweetened butternut side-dish is unique, easy to prepare, and perfect as a spit-braai accompanying vegetable. The recipe is intended for a large group but the quantities can be scaled down to suit fewer people.

Recipe Ingredients

  • 5 Kg SPAR Freshline cubed butternut (10 x 500 g packets)
  • 2 litres SPAR fresh cream
  • 3 packets ginger-nut biscuits, broken up into small pieces

Recipe Method

  1. Preheat oven to 180 º C. Lightly coat 3 x SPAR Good Living 390 mm x 230 mm oven roasters, with non-stick cooking spray.
  2. In a 3 litre SPAR Good Living porcelain mixing bowl, soak the cream and biscuit pieces together for 20 minutes.
  3. Meanwhile par-boil the cubed butternut in salted water for 10 minutes. Drain off the cooking water well, and transfer the butternut into the prepared roasters. Pour over the soaked cream biscuit mixture.
  4. Bake for 30 - 35 minutes.

Hints & Tips

Substitute 1 kg butternut for the same mass peeled and thinly sliced potato and you won't have to serve a separate starch.
