Recipe Ingredients

  • 2 SPAR Freshline butternuts, cut into wedges and seeds removed
  • SPAR olive oil, to drizzle
  • Salt and black pepper, to taste
  • Dried chilli flakes, to taste
  • 200g SPAR Freshline rocket leaves
  • 100g goat cheese

Garnish

  • Edible flowers

Recipe Method

  1. Preheat the oven to 200°C.
  2. Place the butternut wedges in a roasting dish, drizzle with olive oil, and season well to taste with salt, pepper, and chilli flakes. Roast in the preheated oven until tender and golden, about 45 minutes.
  3. Serve the wedges topped with fresh rocket leaves and chunks of goats cheese.
