Salted Caramel Flapjacks with Banana Recipe

A delicious weekend brunch, dessert or any time you feel like really spoiling your taste buds, tuck into a stack of flapjacks with a banana caramel sauce.

Recipe Ingredients

  • 2¼ cups SPAR cake wheat flour
  • 2½ tsp baking powder
  • ½ tsp salt
  • 2 SPAR eggs
  • ¼ cup SPAR brown sugar
  • 1½ cups SPAR buttermilk
  • ¼ cup melted SPAR butter
  • 2 ripe SPAR Freshline bananas, mashed
  • 1 tsp vanilla extract
  • ½ can SPAR Caramel Fantasy for serving
  •  2-3 Tbsp SPAR full fat milk 
  • ¼ tsp salt 
  • Chopped SPAR almonds for serving, roasted
  • Ripe SPAR Freshline banana for serving, sliced
  • Whipped cream or SPAR crème fraiche to taste for serving

Recipe Method

  1. Sift the flour, baking powder and salt.
  2. In a separate bowl, whisk the eggs, sugar, buttermilk, butter, bananas and vanilla.
  3. Add the dry ingredients to the wet ingredients and mix until just combined.
  4. Heat a non-stick pan, lightly oil it and drop in spoonfuls of batter (about 2-3 Tbsp per flapjack).
  5. Cook until golden on one side and bubbles start breaking through to the top. Then carefully flip them and cook until golden on the other side too.
  6. Mix the SPAR caramel fantasy with milk and salt and serve the pancakes drizzled with the caramel sauce.
