Bavette Plankie with Veg Recipe

Bavette is a piece of steak that comes from near the flank and is often called the butcher's cut as it's the one they save for themselves. Tender and full of flavour, it is perfectly paired with a slightly spicy roasted veg salad with a herb and orange dressing.

Recipe Ingredients

  • 2 SPAR Tender & Tasty bavette plankie steaks
  • Seasoning
 

Roasted Veg Salad

  • 410g (1 can) SPAR butter beans drained
  • 1 whole SPAR Freshline butternut
  • 250g SPAR Freshline broccoli florets
  • 2 Tbsp (30ml) SPAR olive oil
  • 1 tsp (5ml) cumin
  • 1 tsp (5ml) coriander
  • 1 tsp (5ml) chilli flakes

Dressing

  • 1/4 cup of Signature Selection garlic and herb vinaigrette
  • Juice and zest of 1 SPAR Freshline orange

Recipe Method

  1. Season the bavette and cook over high heat for 2 – 3 minutes a side.
  2. Place in a 180 ºC oven and roast for 15 minutes, turning halfway through.
  3. Leave to rest for 10 minutes then slice.
  4. To make the salad, peel and cut the butternut into half-moons.
  5. Toss the butternut in the olive oil and spices and roast at 180 ºC for 20 minutes.
  6. Add the broccoli during the last 10 minutes of cooking.
  7. To make the dressing, whisk the vinaigrette with the orange zest and juice.
  8. Arrange the veg on a platter and spoon over the beans and dressing and serve with the sliced bavette.
