Slow Roasted Lamb Delight with Whipped Herb Feta

Cooking Time: 4 hrs

Serves: 6

Recipe Ingredients

  • 2 Tbsp SPAR olive oil
  • Seasoning
  • 2.5kg SPAR Tender & Tasty leg of lamb, bone-in
  • 1 SPAR Freshline onion, quartered
  • 1 garlic bulb, cut in half
  • Bunch of fresh thyme
  • 2 sprigs of SPAR Freshline fresh rosemary
  • 2 cups of light lamb or vegetable stock
  • 1 lemon

Recipe Method

  1. Heat the oven to 200ºC.
  2. Heat the oil over a medium heat in a large pan.
  3. Season the lamb and sear until well browned.
  4. Add the onion, garlic and herbs into a large casserole dish with a tight-fitting lid.
  5. Place the seared lamb on top and pour over the stock.
  6. Cut a piece of baking paper slightly bigger than the circumference of the pot and cover the lamb, pressing down to seal the liquid in, and cover with the lid.
  7. Place the casserole dish in the oven and reduce the heat to 150ºC.
  8. Slow roast for 4 hours or until the meat is falling off the bone.
  9. Season with lemon juice and serve with pan juices and whipped feta.

 


 

Whipped Herb Feta

Difficulty: Easy

Prep Time: 10 minutes 

Makes: 1½ cups

 

Recipe Ingredients

  • 2 rounds of SPAR feta 
  • 1 Tbsp (15ml) SPAR olive oil
  • ½ cup (125ml) SPAR cream
  • ½ cup (125ml) SPAR plain yoghurt 
  • 4 sprigs of SPAR dill

 

To Serve

  • ¼ cup (60ml) SPAR honey

 

Recipe Method

  1. Blend all the ingredients together until smooth and creamy.
  2. Serve in a bowl drizzled with honey.

 


 

Sides - Roasted Potatoes

Difficulty: Easy

Cooking Time: 30 minutes 

Serves: 6

 

Recipe Ingredients

  • 2 packets of 400g SPAR Freshline baby potatoes in herb butter
  • 3 Tbsp (45ml) SPAR olive oil
  • Seasoning

 

Recipe Method

  1. Place the potatoes in a roasting dish and drizzle with olive oil and season.
  2. Roast for 25 – 30 minutes or until golden brown and crispy.
  3. Toss through the butter and herbs and serve immediately.

 


 

Roasted Carrots

Difficulty: Easy

Cooking Time: 20 minutes 

Serves: 6

 

Recipe Ingredients

  • 1 packet of SPAR Freshline carrots
  • 2 Tbsp (30ml) SPAR olive oil
  • 2 Tbsp (30ml) Signature Selection hot honey
  • Seasoning

 

Recipe Method

  1. Peel the carrots and place in a roasting dish.
  2. Drizzle over the olive and honey and season.
  3. Roast at 200ºC for 20 minutes or until the carrots are tender.
