Festive Fruit Mince Tart Recipe

This makes an interesting change to individual fruit mince pies and is wonderful served warm with custard or fresh cream.

Recipe Ingredients

Base

  • 375 ml SPAR cake flour
  • 180 g SPAR butter
  • 100 ml SPAR icing sugar
  • 10 ml ground cinnamon
  • 50 ml brandy

Filling

  • 1 ½ tubs SPAR crème fraiche (375 g)
  • 75 ml fruit mincemeat
  • finely grated rind of an orange
  • 3 large SPAR eggs, lightly beaten
     

Recipe Method

  1. Pre-heat oven to 180 º C. Lightly grease a 23 - 25 cm diameter pie plate.
  2. Process the base ingredients together, to achieve a ball of dough.
  3. Freeze the dough for 15 minutes.
  4. Press ¾ of the pastry into the prepared pie plate, base and sides.
  5. Blend the crème fraiche, fruit mincemeat and orange rind together, and add in the beaten eggs, to achieve a smooth mixture. Pour this into the pastry base.
  6. Grate the remaining frozen pastry directly over the top, and place into the pre-heated oven immediately.
  7. Bake for 40 minutes. Serve warm.

Hints & Tips

Mascarpone or smooth cottage cheese can used as a substitute for creme fraiche.
