Butternut Squash Basmati Rice Recipe
Spiced, roasted butternut with fragrant basmatic rice and fresh herbs makes for a filling and delicious vegetarian feast.
Recipe Ingredients
- 1 red onion, cut into 8 wedges
- 1 Tbsp Moroccan spice blend
- 350g pack ready-diced SPAR butternut
- 2 Tbsp olive oil
- 1 cup SPAR brown basmati rice
- 1 tsp turmeric
- 2½ cm/1in piece root ginger, peeled and finely grated
- 1 garlic clove, crushed
- 2 cups vegetable stock
- 1 round feta, crumbled
- 2-3 Tbsp coriander pesto (optional)
- fresh herbs like basil or coriander for serving
Recipe Method
- Preheat the oven to 200C.
- Toss the onion, Moroccan spice, butternut and olive oil together and spread them out evenly on an oven tray.
- Bake for 40 minutes or until charred.
- Meanwhile, simmer together the rice, turmeric, ginger, garlic and vegetable stock until the rice is cooked and all the liquid has been absorbed.
- Fluff the rice with a fork and toss with the butternut ingredients.
- Serve topped with feta, pesto and herbs.
