Butternut Squash Basmati Rice Recipe

Spiced, roasted butternut with fragrant basmatic rice and fresh herbs makes for a filling and delicious vegetarian feast.

Recipe Ingredients

  • 1 red onion, cut into 8 wedges
  • 1 Tbsp Moroccan spice blend
  • 350g pack ready-diced SPAR butternut
  • 2 Tbsp olive oil
  • 1 cup SPAR brown basmati rice
  • 1 tsp turmeric
  • 2½ cm/1in piece root ginger, peeled and finely grated
  • 1 garlic clove, crushed
  • 2 cups vegetable stock
  • 1 round feta, crumbled
  • 2-3 Tbsp coriander pesto (optional)
  • fresh herbs like basil or coriander for serving

Recipe Method

  1. Preheat the oven to 200C.
  2. Toss the onion, Moroccan spice, butternut and olive oil together and spread them out evenly on an oven tray.
  3. Bake for 40 minutes or until charred.
  4. Meanwhile, simmer together the rice, turmeric, ginger, garlic and vegetable stock until the rice is cooked and all the liquid has been absorbed.
  5. Fluff the rice with a fork and toss with the butternut ingredients.
  6. Serve topped with feta, pesto and herbs.
