Weber Lemon and Thyme Chicken Recipe

Braai a whole chicken, basted with thyme, lemon and garlic, instead of roasting in the oven on loadshedding nights.

Recipe Ingredients

  • 4 SPAR Freshline garlic cloves, peeled and minced
  • 3 SPAR Freshline lemons, zested and juiced
  • 50g SPAR Freshline thyme, leaves picked off stalks and stalks discarded and extra thyme, to garnish
  • 50ml SPAR olive oil
  • Salt and pepper, to taste
  • 1 SPAR Select whole fresh chicken

Recipe Method

  1. Prepare your coals on the Weber to medium-high heat, around 200-220°C.
  2. In a small bowl, combine the minced garlic, lemon zest, and fresh thyme. Add the olive oil, lemon juice, and a pinch of salt and pepper. Mix well to combine.
  3. Use a basting brush to coat the chicken with the lemon thyme mixture, making sure to get some of it into the cavity of the chicken as well.
  4. Place the chicken in the Weber, breast side up, with a foil roasting tray below the grid (place chicken directly on the grid – the tray below will catch the juices that fall as the chicken cooks). Close the lid and cook for about 1 hour or until the internal temperature of the chicken reaches 74°C.
  5. Remove the chicken from the Weber and let it rest for 10 minutes before carving.
  6. Serve the chicken with additional lemon wedges and garnish with fresh thyme sprigs, if desired.
