Watermelon and Feta salad Recipe

A modern South African classic that's perfect for sunny, alfresco dining!

Recipe Ingredients

  • 750 g SPAR Freshline watermelon, rind removed and cut into rounds
  • 200g SPAR Freshline strawberries
  • 200 g SPAR feta cheese with black pepper, cut into 1cm cubes
  • 30 ml SPAR pumpkin seeds
  • 5 ml Paprika
  • 15 ml SPAR Freshline mint, chopped
  • Salt and pepper to season
  • 15 ml red wine vinegar
  • 30 ml SPAR olive oil
  • 2 SPAR Freshline celery sticks, finely diced

Recipe Method

  1. Place watermelon, strawberries, feta and pumpkin seeds in a bowl.
  2. Mix the paprika, mint, salt and pepper, red wine vinegar and olive oil together and pour over watermelon and feta. Toss to coat well.
  3. Arrange a few rocket leaves on serving plates. Place the tossed fruit on top. Just before serving, sprinkle with celery.

Hints & Tips

We cut our water melon into round discs using a small scone cutter.  You can get creative and use a melon baller or cut any shape of your choice.
