Tuscan Bean Salami Feast Recipe

A delicious mix of beans, salami and goat cheese lightly fried to bring out the flavours and then served on a slice of rye for a light lunch.

Recipe Ingredients

  • dash SPAR extra-virgin olive oil
  • 1 large onion, finely chopped
  • 3 large cloves fresh garlic, finely chopped
  • 15 ml basil pesto
  • 2 cans SPAR mixed beans, well drained
  • 1 can SPAR diced tomato
  • 125 g salami, finely diced
  • 150 g peppered goats-milk cheese, cubed
  • 1 loaf SPAR Freshline 100% rye bread

Recipe Method

  1.  In a pan, fry the onion and garlic in heated olive oil until tender. Spoon in the pesto and cook briefly.
  2. Toss in the beans, tomato and salami and simmer off some of the tomato liquid.
  3. Remove the pan off the heat. Add the cheese cubes, without stirring. They will just soften in the heat of the other ingredients and still retain their shape.
  4. Toast the rye bread slices, drizzle with olive oil and immediately thereafter, pile the mixture on top and serve.

Hints & Tips

An appropriate substitute for rye bread would be a bruschetta or pannini bread-rolls sliced in half.
As a vegetarian, simply omit the salami entirely.
