Roast Vegetables with Chilli Oil Recipe
Make the side dish the star of the show with some honey, lemon, chilli and a selection of fresh herbs.
Recipe Ingredients
- 1 SPAR Freshline Potjie pack
- 1 SPAR Freshline Sweet potato pack
- 1 SPAR Freshline punnet Roma tomatoes, washed
- 2 TBSP SPAR olive oil
- 1 TBSP SPAR lemon juice
- 1 tsp SPAR honey
- ¼ tsp salt
- ½ tsp pepper
- 1 SPAR Freshline chilli, chopped
- SPAR Freshline - herbs: parsley, coriander, thyme, rosemary
Recipe Method
- Preheat the oven to 200° c.
- Line a baking tray with baking paper.
- In a large bowl, toss potjie pack, sweet potatoes and tomatoes with 2 tablespoons of olive oil and salt & pepper to taste.
- Transfer the vegetables to the baking tray and roast in the oven until tender and caramelised +- 30 minutes.
- Place the roasted vegetables onto a serving platter.
- In a bowl mix together oil, lemon juice, honey, salt & pepper, chilli.
- Pour over vegetables and serve with fresh herb garnish.
