Scrambled Egg Quesadilla Recipe

Impress friends and fam with your tortilla origami skills with these breakfast quesadillas.

Recipe Ingredients

  • 4 medium tortillas or SPAR Freshline large white wraps
  • 6 SPAR large eggs, scrambled
  • SPAR Sriracha or other chilli sauce to taste
  • 1 cup grated SPAR cheddar cheese
  • Oil for frying

Smokey black beans

  • 1 Tbsp SPAR olive oil
  • 1 can SPAR black beans, rinsed and drained
  • 1 tsp ground cumin
  • ¼ tsp smoked paprika *optional
  • 1 tablespoon finely chopped SPAR Freshline coriander
  • Salt and pepper

Fresh tomato and avocado salsa

  • Handful SPAR Freshline cherry tomatoes, quartered
  • ½ SPAR Freshline red onion, finely chopped or 2 Tbsp chopped SPAR Freshline spring onion
  • 1 SPAR Freshline avo, peeled and diced
  • Salt and pepper
  • Juice of a SPAR Freshline lime or ½ a lemon

Recipe Method

  1. Fry the beans in the olive oil with the cumin and smoked paprika for about 5 minutes, stir through the chopped coriander and season to taste.
  2. Cut a slit in the middle of each of the tortillas, stopping at the centre.
  3. Pile scrambled egg on the one quarter of the wrap, spicy beans on the next quarter and then cheese on the next corner.
  4. Now fold the wrap up into itself so that you are left with a triangle.
  5. Heat a large non-stick pan and carefully cook the wrap on both sides (work gently so the filling doesn’t fall out).
