  • 100 g packet pecan nuts

Recipe Method

  1. Place the biscuits in a food processor and crumb finely on full speed.
  2. Add in the icing sugar and juice, and process further to a paste.
  3. Lastly add the nuts in one action, processing briefly to finely chop but not crumb them.
  4. Using your hands, scoop out and form large marble-size balls from the mixture.
  5. Refrigerate until firm, then roll them in icing sugar to coat well.

Hints & Tips

If you do not have the use of a food processor, crumb the biscuits in a bag by rolling over firmly and repeatedly with a rolling pin. Chop the nuts coarsely on a chopping board with a knife.

These sweets keep successfully in the fridge for at least a week.

Try other wafer biscuit flavours and nut combinations eg chocolate wafers with nibbed almonds, or strawberry wafers with unsalted cashews
