A citrus marinade with an apricot jam glaze and apple wedges makes for a fruity roast that’s a braai hit!

Recipe Ingredients

  • 1 SPAR T&T Pork belly roast, whole
  • 1 SPAR Freshline lemon, zest & juice
  • 1 SPAR Freshline small orange, juice
  • 1 tsp black pepper
  • 3 SPAR Freshline apples, cut into wedges and brushed with oil
  • 1 TBSP SPAR Apricot jam, to glaze

Recipe Method

  1. Make a good fire and prepare your coals.
  2. Place the pork belly in a bowl and add lemon juice & zest, orange juice and black pepper.
  3. Marinate for 30 minutes
  4. Place the prepared pork belly and apple wedges onto the grill over moderate coals and cook slowly – turning often - making sure the meat cooks evenly.
  5. The apples will cook quicker, so set aside when done.
  6. Check with a thermometer that the pork belly centre is hot.
  7. Glaze the pork with jam and cook for 2 minutes on each side.
  8. Take off the braai, slice and serve with the cooked apple wedges.
