Citrus Chicken Parcels Recipe

Cooking skinless chicken breasts in a foil parcel with a zesty orange and mustard flavouring seals in the moisture and infuses the meat with delicious flavours.

Recipe Ingredients

  • 4 chicken breast fillets
  • 2 oranges, peeled and segmented (grate rind of ½)
  • 50 ml honey
  • 20 ml wholegrain mustard
  • ¼ roll garlic and parsley butter
  • salt and pepper to taste

Recipe Method

  1. Preheat oven to 220 ºC with baking tray inside. Cut 4 large squares of greaseproof paper or foil.
  2. Mix orange segments and zest wit the honey and mustard.
  3. Place each fillet on a foil square, and pour over the orange mixture. Top each with knob of butter, season to taste, and seal parcel well.
  4. Place parcels on pre-heated baking tray and bake for 15-20 minutes.
  5. To serve, open each parcel slightly and top with celery strips.

Hints & Tips

Try this concept with fresh fish and substitute oranges with plum jam and add a dash of soy sauce to it.
