Moroccan Chicken Tray Bake Recipe

Tender chicken pieces roasted with Moroccan spices butternut, lemon and olives.

Recipe Ingredients

  • 8 SPAR Chicken Pieces
  • 3 Tbsp Moroccan spice
  • 3 Tbsp SPAR Olive Oil
  • 1 medium butternut, peeled and cut into chunks
  • 1 red onion, peeled and cut into petals
  • 1 lemon, sliced
  • 1 sachet SPAR Green Olives

Recipe Method

  1. Preheat the oven to 180 ºC.
  2. Toss the chicken pieces in the Moroccan spice and 2 Tbsp olive oil.
  3. Place the butternut, onion and lemon slices on a roasting tray and toss with the remaining olive oil.
  4. Place the chicken pieces on top.
  5. Roast for 30 minutes, then lay the olives on top and roast for another 10 minutes.
  6. Serve with a side of couscous or rice, and fresh herbs like origanum or parsley
