Muesli Fruit Cake Recipe

A deliciously wholegrain, almost chewy textured cake, that is a great alternative to traditional tea-time bakes.

Recipe Ingredients

  • 150 g SPAR quick cooking oats
  • 100 ml SPAR toasted fibre bran cereal (60 g)
  • 2 ml salt
  • 25 ml baking powder
  • 150 g whole-wheat flour
  • 4 SPAR Freshline Seasons Favourites apples, peeled and grated
  • 250 ml SPAR Fruits of The Cape yoghurt
  • ½ pkt SPAR cranberries (100 g)
  • 60 ml SPAR honey
  • 10 ml vanilla essence

Recipe Method

1. Pre-heat oven 180ºC. Grease a SPAR Good Living 23 cm diameter loose-bottomed cake tin.
2. Combine the oats, bran cereal, salt, baking powder and flour in a mixing bowl.
3. Add the remaining ingredients and blend to combine well.
4. Spoon into the prepared cake tin and bake for 45 minutes.

Hints & Tips

This would even be suitable for a brunch tart as something different, perhaps preceded by a savoury egg dish.
