Italian Salad

Crispy, baked parmesan slices and a trio of tomatoes add the interest to this traditional Italian salad.

Ingredients

  • +-150g grated Parmesan cheese
  • 200g punnet SPAR Freshline mini plum or cherry tomatoes
  • 3 jam tomatoes, thickly sliced into rounds
  • 3 medium salad tomatoes, cut into wedges
  • 4 spring onions, rinsed and chopped
  • 10ml SPAR balsamic vinegar
  • 50ml SPAR extra virgin olive oil
  • 20ml basil pesto

 

Method

  1. Preheat oven to 240º C. Spoon the cheese on a greased baking tray. Lightly press down on the cheese to compact it somewhat.
  2. Bake in the pre-heated oven for 5-6 minutes until the cheese melts, spreads and the edges are dark golden brown.
  3. Using a SPAR Good Living lifter, lift from the tray while still slightly warm, and set aside to cool and crispen.
  4. Toss all three tomatoes together with the chopped spring onions, (or arrange on a salad platter.)
  5. Combine the dressing ingredients and drizzle over the tomatoes. Chill.
  6. Just before serving, cut off shards of parmesan crisp using SPAR Good Living kitchen scissors, and place them amongst the tomatoes. Serve immediately.

Hints & Tips

Any single tomato cultivar may be used, but the trio does lend variety and culinary appeal.
