Greek Island Pie Recipe

Make use of traditional Greek culinary ingredients in this quick mix and bake that will delight your family as a light main course.

Recipe Ingredients

  • 1 pack  SPAR Freshline white pita bread, cut into quarters
  • 2 rounds SPAR Feta Cheese, cubed or crumbled
  • 250 ml black olive slices  (+-125g – usually obtainable at the Deli Counter as a loose-serve item)
  •   6 - 8 slices salami (off large diameter roll), roughly chopped
  • 375 ml SPAR Double Cream Plain Yoghurt
  • 250 ml SPAR milk
  • 3 large SPAR eggs
  •   ground pepper to taste
  • Good handful  of chopped fresh oregano

Recipe Method

  1. Lightly grease a fairly shallow, medium-size oven dish.
  2. Place half the pita bread, feta, olives and salami in the dish. Repeat this procedure to make a second layer.
  3. Lightly whisk the yoghurt and milk together. Season with pepper and stir in the chopped oreganum.   Pour ¾ of this mixture gently over the layered ingredients to almost fill the dish. Cover and set aside for 30 minutes while the oven pre-heats to 190° C.  Beat the eggs into the remaining milk/yoghurt mixture and gently pour this over, to fill the dish.
  4. Bake for 35 minutes until firm and browned on top. Serve warm.

Hints & Tips

Do not add salt out of habit. We have intentionally left it out as there is sufficient salt from the feta and salami.
