Garlic and Basil Chicken with Tomato Butter sauce Recipe

Fresh tomatoes, garlic, basil and butter combine to create a sauce that's full of flavour and perfect for this chicken and pasta dish.

Recipe Ingredients

  • 4 SPAR Boneless Skinless Chicken Breasts
  • 300-400 g SPAR Spaghetti
  • salt and pepper
  • ¼ cup SPAR Olive Oil
  • 5-6 Roma tomatoes, diced
  • 3 cloves of garlic, peeled and finely chopped
  • ¼ cup of butter
  • a handful of fresh basil, roughly cut.
  • a handful of SPAR Marksbury Select Parmegiano shavings (for serving)

Recipe Method

  1. Place each chicken breast fillet between two pieces of plastic wrap and bash it to obtain an even thickness.
  2. Cook the pasta according to the package directions.
  3. Heat the olive oil in a large heavy pan and fry the chicken for several minutes on each side – until brown and cooked, but not dried out. Set aside when done.
  4. Leave the pan to cool a little then add the tomatoes.
  5. Simmer to cook the tomatoes down into a chunky sauce-like mixture. Add the garlic and butter and stir to combine until the butter is melted. Add the chicken back in to soak in the sauce for a few minutes.
  6. Right before serving, stir in the basil and toss through the pasta.
  7. Serve with parmesan shavings.
