Diwali Coconut Morsels Recipe

Recipe Ingredients

  • 1 can SPAR condensed milk
  • 350 ml vanilla yoghurt
  • 100 ml SPAR sunflower oil
  • 100 ml poppy seeds
  • 250 ml dessicated coconut
  • 500 g SPAR self-raising flour

Recipe Method

  1. Pre-heat oven to 190 º C.
  2. In a mixing bowl, beat the milk, yoghurt and oil together. Blend in the poppy seeds, coconut and flour in one step.
  3. Spoon the mixture into either individual portion tiny cupcake cases, or as a slab cake in a shallow baking tin for slicing diamonds from strips, later on.
  4. Bake for 10 minutes (tiny cupcakes) or 20 minutes (baking tin slab)
  5. When cool, spoon a whirl of topping over each portion, and decorate either with shavings of fresh coconut or a dragee.

Hints & Tips

Experiment with various sizes such as fairy cakes, mini loaf-tins for slices etc to make your selection visually interesting.
