Curried Mince Jaffle Recipe

An ideal camping snack. Make the mince curry ahead of time and enjoy hot toasted jaffles wherever you are.

Recipe Ingredients

  • 15 ml SPAR olive oil
  • 1 SPAR Freshline onion diced
  • 2 cloves of SPAR Freshline garlic chopped
  • 30 ml medium curry powder
  • 20 ml turmeric
  • 30 ml SPAR fruit chutney
  • 500 g lean beef mince
  • 410 g can SPAR diced tomato
  • 1 handful SPAR Freshline coriander, chopped
  • Freshly ground salt and pepper
  • 24 slices SPAR Bakery white bread
  • 115g (125 ml) softened SPAR butter

Recipe Method

  1. Heat olive oil in medium-sized pot over high heat. Add onion, garlic and spices. Fry until fragrant – 1 to 2 minutes. 
  2. Add chutney and beef mince, and fry until mince is brown. Add tomatoes and lower heat. Simmer until a fragrant sauce – 10 to 12 minutes. 
  3. Remove from heat. Season with salt and pepper. Add chopped coriander. Let mince mixture cool to room temperature. 
  4. Spread butter on one side of each slice of bread. Place one slice at a time in jaffle iron, buttered side facing down. 
  5. Spoon mince mixture on top of bread before placing second slice of bread on top, buttered side facing up. 
  6. Close iron and trim off excess bread. Fry over low heat for 2-3 minutes per side, or until golden brown. 
  7. Remove from iron and make more jaffles with the rest of the bread and filling. Serve warm.
