Stuffed Peppers Recipe

A colourful and healthy dish that provides all of the food groups.

Recipe Ingredients

2 tablespoons SPAR olive oil
1 pack SPAR Freshline Rainbow Peppers
1 SPAR Freshline onion, diced
500g beef mince
1 teaspoon SPAR Freshline thyme, finely chopped
1 teaspoon oregano, dried 
1 teaspoon salt
½ teaspoon pepper
400g tin SPAR diced tomatoes
1 cup cooked brown rice
½ cup SPAR cheddar cheese
½ cup SPAR mozzarella cheese
¼ cup SPAR Parmigiano Reggiano cheese
SPAR Freshline parsley for garnish

Recipe Method

  1. Preheat the oven to 180°C 
  2. Prepare the peppers: slice in half, remove the seeds and membrane.
  3. Brush the halves with olive oil inside and out and roast them for 10 minutes. Set aside.
  4. In a large pan add olive oil and heat gently.
  5. Add the onion and cook until soft.
  6. Add the mince, thyme, oregano, salt and pepper.
  7. Pour in the tomatoes and cook for 5 minutes.
  8. Add the rice to half the quantity of cheddar, half the quantity of mozzarella and all the Parmesan.
  9. Spoon the stuffing into each pepper half, then top with the other half of the cheddar cheese and mozzarella.
  10.  Place in the oven and cook for 10 minutes.
  11.  Garnish with fresh parsley.
