Choc-Chip Peanut Flatties Recipe

A fun holiday bake for the children; encourage them to prepare the biscuits themselves. They will need no encouragement to eat them!

Recipe Ingredients

  • 250g SPAR brick margarine, well softened
  • 250ml SPAR smooth peanut butter
  • 375ml caramel brown sugar
  • 2 large SPAR eggs
  • 5ml vanilla essence
  • 625ml SPAR cake flour
  • 2ml baking powder
  • 5ml bicarbonate of soda
  • 60ml corn flour
  • 250ml cocktail peanuts
  • 250ml choc-chips

Recipe Method

  1. Lightly grease 2 large baking tins.
  2. In a SPAR Good Living 3 litre porcelain mixing bowl, place the margarine, peanut butter, sugar, eggs and vanilla essence. Mix thoroughly on high speed if using a hand-held electric mixer, to a creamy mixture.
  3. Blend in the remaining ingredients in the order they appear.
  4. Roughly divide the mixture in half, and shape each into a log resembling the diameter of a swiss-roll. Freeze for at least 30 minutes.
  5. Meanwhile pre-heat the oven to 180 ºC.
  6. Slice both rolls into 8, and place each slice spaced well apart onto prepared baking tins, pushing down on each with your palm to flatten further and increase their size.
  7. Bake for 15 - 20 minutes.
  8. Using a broad lifter, transfer the biscuits to cooling rack a few minutes after removing from the oven.
  9. Store in an airtight container.

Hints & Tips

  • You can skip step 4 and just roll large marble-size balls and press them flat with a floured fork, on the baking tin, but this is a bit of a sticky job and not the easiest.
  • These freeze well.
