Crumbed Chicken Breasts with Honey and Thyme Recipe

Fresh chicken breasts, seasoned with thyme and coated with a crispy, cornflake crumb.

Recipe Ingredients

  • 8 SPAR Select boneless, skinless chicken breasts
  • 2 cups cornflake crumbs (put SPAR cornflakes in a large Ziploc bag and roll with a rolling pin to crush)
  • 1 cup SPAR cake flour
  • 2 large SPAR eggs, beaten
  • Salt and pepper, to taste
  • Small handful chopped fresh SPAR Freshline thyme leaves
  • SPAR olive oil, to drizzle
  • Small handful fresh SPAR Freshline thyme sprigs
  • 1/4 cup SPAR honey

Recipe Method

  1. Preheat the oven to 200°C.
  2. Line a baking sheet with baking paper.
  3. Place your chicken breasts on a wooden board and slightly bash with a rolling pin to flatten.
  4. Place the cornflake crumbs in a shallow bowl.
  5. Place the cake flour in a separate shallow bowl.
  6. Place the beaten eggs in a third shallow bowl.
  7. Season the chicken breasts with salt, pepper, and chopped fresh thyme leaves.
  8. Dip each chicken breast in the flour, shaking off any excess.
  9. Dip the chicken breast in the beaten egg, then coat it with the cornflake crumbs, pressing the crumbs onto the chicken to make sure they adhere well.
  10. Place the crumbed chicken breasts on the lined baking sheet.
  11. Drizzle a little olive oil over the chicken breasts.
  12. Bake the chicken in the preheated oven for 25 – 30 minutes, or until golden brown and cooked through.
  13. Serve drizzled with honey and sprinkled with extra thyme sprigs, to garnish.
