Coconut Mango Chicken Recipe

A lovely summer dish featuring tropical coconut and mango flavours with a mild curry bite.

Recipe Ingredients

  • ½ cup shredded coconut
  • 2 tablespoon curry powder
  • 2 teaspoon salt
  • ½ cup SPAR coconut milk, unsweetened
  • 4 SPAR Select chicken breasts
  • 2 tablespoon coconut oil
  • 1 SPAR Freshline lime, cut

For the mango salsa

  • 1 SPAR Freshline mango, cubed
  • 1 SPAR Freshline red onion, finely chopped
  • 1 chilli, finely chopped
  • 1 SPAR Freshline cup cucumber, cubed
  • 2 tablespoon rice wine vinegar
  • 2 tablespoon SPAR Freshline mint, chopped
  • 1 tablespoon SPAR Freshline coriander, chopped
  • 1 tablespoon SPAR Freshline spring onion, thinly sliced
  • 1 teaspoon SPAR honey
  • 1 teaspoon SPAR Freshline lime juice
  • 1 teaspoon SPAR Freshline lime zest
  • Salt & pepper, to taste

Recipe Method

  1. Pre-heat the oven to 180c.
  2. In a large bowl combine the coconut, curry powder and salt and mix well.
  3. Pour the coconut milk into another bowl and stir well.
  4. Place the chicken into the bowl then dip into the curry mix, coating well.
  5. Heat a frying pan over a medium-high heat and add coconut oil.
  6. Place chicken in the hot pan and cook until brown on both sides.
  7. Squeeze lime juice over all the chicken breasts.
  8. Place in the oven for +- 5 minutes until cooked through.
  9. For the salsa: In a large bowl mix all the ingredients together and set aside for 10 minutes.
  10. Slice the chicken breasts, place onto a plate and top with fresh salsa.
