Chorizo, Spinach and Chickpea Ragout Recipe

Delicious with a yoghurt drizzle and some crusty bread.

Recipe Ingredients

  • 1 Tbsp (15ml) SPAR olive oil
  • 1 SPAR Freshline onion, chopped
  • 2 SPAR Freshline garlic cloves, finely minced
  • 1 link (about 225g) chorizo, sliced into 1cm-thick slices
  • 1 can (400g) SPAR chickpeas, rinsed and drained
  • 1 can (400g) SPAR diced tomatoes
  • 2 Tbsp (30ml) fresh oregano, chopped
  • 1 tsp (5ml) smoked paprika
  • 1 bag SPAR Freshline Baby spinach
  • Salt and freshly milled pepper

Recipe Method

  1. Sauté the onion in the oil for 5 minutes then add the garlic and the chorizo and cook for another 5 minutes until it starts going golden brown.
  2. Add the chickpeas, tomatoes, oregano and smoked paprika, and cook for 10 minutes.
  3. Stir through the spinach and leave to wilt – it should take about 3 - 5 minutes. Season well and serve.
