Chorizo, Spinach and Chickpea Ragout Recipe
Delicious with a yoghurt drizzle and some crusty bread.
Recipe Ingredients
- 1 Tbsp (15ml) SPAR olive oil
- 1 SPAR Freshline onion, chopped
- 2 SPAR Freshline garlic cloves, finely minced
- 1 link (about 225g) chorizo, sliced into 1cm-thick slices
- 1 can (400g) SPAR chickpeas, rinsed and drained
- 1 can (400g) SPAR diced tomatoes
- 2 Tbsp (30ml) fresh oregano, chopped
- 1 tsp (5ml) smoked paprika
- 1 bag SPAR Freshline Baby spinach
- Salt and freshly milled pepper
Recipe Method
- Sauté the onion in the oil for 5 minutes then add the garlic and the chorizo and cook for another 5 minutes until it starts going golden brown.
- Add the chickpeas, tomatoes, oregano and smoked paprika, and cook for 10 minutes.
- Stir through the spinach and leave to wilt – it should take about 3 - 5 minutes. Season well and serve.
