Chicken Potjie Recipe

A Cape Malay inspired potjie with dried peaches, chutney, Worcestershire sauce and spicy cinnamon.

Recipe Ingredients

  • 1 tablespoon SPAR Sunflower oil
  • 12 SPAR Select Chicken Star Pack (drums and thighs)
  • 2 SPAR Freshline onions, sliced
  • 1 SPAR Freshline garlic clove, minced 
  • 1 SPAR Freshline Potjie Pack
  • 250g dried peaches, chopped
  • 2 cups water 
  • 2 cups white wine
  • 8 tablespoon SPAR fruit chutney
  • 8 tablespoon SPAR mayonnaise
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon black pepper
  • 2 bay leaves
  • 1 stick of cinnamon
  • Salt, to taste

Recipe Method

  1. Make a good fire and prepare your coals.
  2. Heat the oil in the potjie over moderate coals and brown the chicken remembering to season well. Set aside.
  3. Add the onion and garlic, frying until the onion is soft.
  4. Then add the browned chicken.
  5. Pour the potjie pack over the chicken and season with salt.
  6. Add the dried peaches.
  7. In a jug combine the water, wine, chutney, mayonnaise, Worcestershire sauce, black pepper, bay leaves and pour over the chicken and vegetables.
  8. Cover and simmer over low coals for 1 hour or until the chicken is tender.
