Cheesy Tomato Aubergine Slices Recipe
Aubergine is a low carb veggie that can be used as a simple base for a cheese and tomato topping. Like a pizza without the dough!

Recipe Ingredients
- 1 Freshline Aubergine - cut into 1.5 cm thick slices
- 4 teaspoons SPAR Olive Oil
- ½ tsp salt
- A pinch of black pepper to season
- ¼ cup SPAR pasta sauce
- ½ cup mozzarella cheese, shredded.
Recipe Method
- Preheat the oven to 200 C
- Brush both sides of the Aubergine with the oil and season with the salt and pepper. Arrange on a baking sheet and bake until browned and almost tender, 6 to 8 minutes, turning once.
- Spread 1 tablespoon of pasta sauce on each eggplant slice. Top with the shredded cheese. Bake until the cheese melts, 3 to 5 minutes. Serve hot.
