Cheese Bread Parcel Recipe

A fab healthier option to a traditional high-fat garlic bread often served at a braai. It’s also great to take along to an end of year function.

Cooking Time

Serves

Makes 16-18 slices

Recipe Ingredients

  • Pack of 2 READYTO BAKE SPAR Freshline French Baguettes OR Seeded Baguettes
  • 1 tub SPAR low fat smooth cottage cheese – garlic and herb flavour (250g)
  •  15ml Dijon mustard
  • SPAR black pepper corn grinder
  • 100g wedge SPAR Marksbury Select Blue cheese
  • SPAR Heavy Aluminium Foil

Recipe Method

  1. Using the diagonal slits already on the loaf, as your guide to the direction of further slicing. Cut additional regularly spaced diagonal slices , almost to the base without cutting through to the bottom crust. Place both loaves together on a large sheet of foil.
  2. Mix the mustard and very generous grinding of black pepper into the tub of cottage cheese. Spread a good spoonful of this mixture between each slice.
  3. Insert a sliver of blue cheese into each gap too, before wrapping the loaves together as a snug parcel, to bake on the cooler side of a braai grid over glowing coals, or in a pre-heated 180°C oven for 20 minutes.

Hints & Tips

Use the foil with its shiny side facing upwards against the actual loaves
Do not freeze these loaves at the pre-baking stage for later use. Cottage cheese does not freeze, thaw and re-heat successfully.
