Hot Cross Bun Treat Recipe

Hot cross buns cooked in a French toast style with banana and fresh berries.

Recipe Ingredients

  • 125g punnet SPAR Freshline Blueberries
  • 250g punnet SPAR Freshline Strawberries
  • 2 SPAR Freshline bananas, sliced
  • 3 tablespoons SPAR white sugar
  • 1 tablespoon water
  • 500ml SPAR buttermilk
  • 4 SPAR large eggs
  • 3 tablespoons SPAR castor sugar
  • 1 teaspoon vanilla essence
  • 1 teaspoon orange zest
  • 4 SPAR Freshline hot cross buns, halved lengthwise 
  • 2 tablespoons SPAR butter plus one teaspoon for frying banana

To serve

  • SPAR Golden Syrup
  • SPAR Icing sugar
  • SPAR Double cream yoghurt

Recipe Method

  1. In a small bowl toss together the berries, sugar, and water. Set aside.
  2. Heat a non-stick frying ban with one teaspoon of butter.
  3. Fry the bananas on both sides until brown and caramelised. Set aside to cool.
  4. In a large bowl, whisk together the buttermilk, eggs, castor sugar, vanilla and orange zest. 
  5. Whisk until smooth.
  6. Heat a non-stick frying pan over a medium heat. 
  7. Melt one tablespoon of butter and spread to coat the pan.
  8. Dip each hot cross bun half in the batter and coat on both sides. Add more butter as required.
  9. Add slices of the prepared hot cross buns to the pan and brown on both sides. Continue with the remaining slices. 
  10. Serve immediately with berries, a drizzle of syrup, powdered sugar and yoghurt.
