Banana Bran Loaf Recipe

Incorporate bran flakes and fresh custard into this loaf for a delicious new twist on the traditional recipe.

Recipe Ingredients

  • 4 large SPAR eggs
  • 500 ml SPAR white or brown sugar
  • 250 ml SPAR sunflower oil
  • 375 ml SPAR fresh vanilla custard
  • 6 medium ripe bananas, peeled and mashed well
  • 480 g SPAR self-raising flour (4 x 250 ml)
  • 2 ml salt
  • 375 ml SPAR Bran Flakes

Recipe Method

  1. Preheat oven to 180ºC. Grease 2 standard loaf pans.
  2. In a SPAR Good Living mixing bowl, beat the eggs until fluffy. Gradually add the sugar, whisking in thoroughly with each addition. Pour on the oil and custard, and blend in with the mashed banana.
  3. Gently blend in the flour and salt to achieve an even mixture. Stir in the bran flakes.
  4. Pour into the prepared tin for 45 minutes or until an inserted skewer comes out clean.

Hints & Tips

Enjoy one now, and freeze the other.
Don't use canola oil instead of sunflower oil, as the flavour is a little dominant for baked goods.
