Apple, Pecan Nut and Cranberry Salad Recipe

A sweet and crunchy salad with a fresh, apple cider vinegar based vinaigrette. Serve as a side salad with cold meats or by itself as a healthy lunch.

Recipe Ingredients

  • 1 SPAR Freshline pack lettuce mix
  • 2 SPAR Freshline apples, cored and thinly sliced
  • ½ cup SPAR Fruit fuel dried cranberries
  • ½ cup SPAR Fruit fuel halved pecans, roasted 
 

For the vinaigrette

  • ½ cup SPAR olive oil
  • 1/3 cup SPAR apple cider vinegar
  • 1 TBSP SPAR white vinegar
  • 3 TBSP SPAR fresh lemon juice
  • 2 TBSP SPAR honey
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ teaspoon garlic powder

Recipe Method

  1. For the vinaigrette, in a bowl whisk together the oil, vinegars, lemon juice, honey, salt, pepper, and garlic powder. Set aside.
  2. Place the lettuce mix into a large salad bowl.
  3. Top with the apples, cranberries and pecan nuts.
  4. Drizzle the vinaigrette over the salad and toss well.
