Potato Nests with Boiled Eggs and Avo Recipe
Make a memorable brunch with these golden, baked potato nests filled with boiled egg and avocado.

Potato Nests
- 6 SPAR Freshline potatoes, peeled and grated
- 45ml SPAR olive oil
- Melted SPAR butter, to brush
To serve
- Boiled eggs, halved, to top
- Chunks of SPAR Freshline avocado
Garnish
- Edible flowers and SPAR Freshline herbs
Recipe Method
- Preheat the oven to 200°C, fan setting.
- Add the grated potatoes to a bowl and season generously with salt. Allow to stand for 15 minutes.
- Grease a cupcake pan until needed. You will have enough potato mixture to do more than 1 tray.
- Squeeze the water out of the potatoes, add the olive oil and stir through.
- Press the potato mixture into the muffin pan to create nests, then brush the nests with butter.
- Bake in the preheated oven until golden brown, about 20 – 30 minutes in total.
- Serve topped with halved boiled eggs, avocado and garnish with herbs and flowers.
