Mushroom Feta and Mint Bruschetta Recipe
Mushrooms simmered in fresh herbs and red wine, piled onto some fresh crusty bread and topped with crumbled feta and freshly torn mint.
Recipe Ingredients
- 3 tablespoon SPAR olive oil
- 280g SPAR Freshline mushrooms, sliced
- 1 teaspoon SPAR Freshline mint, chopped
- ½ teaspoon SPAR Freshline thyme, chopped
- 2 tablespoon SPAR Freshline onions, finely chopped
- 1 clove SPAR Freshline garlic, minced
- ½ cup red wine
- 8 slices crusty SPAR Bakery bread
- ½ cup SPAR feta cheese
- Salt and pepper, to taste
Recipe Method
- Pre-heat the oven grill.
- Heat 2 tablespoons of oil in a large pan over a medium-high heat.
- Add the mushrooms, mint and thyme and cook until mushrooms are brown.
- Add the onions and cook for 3 minutes then add the garlic and cook for another 1 minute.
- Stir in the wine and simmer for 2 minutes.
- Season with salt and pepper and set aside.
- Place the bread slices onto a baking tray.
- Brush with the remaining oil.
- Grill in the oven until lightly toasted.
- Top with the mushroom mixture and sprinkle with crumbled feta.
- Garnish with fresh mint.
