Green Bean and Potato Salad Recipe
Potato salad or bean salad? Why not both with this sour cream, potato and bean salad with a little mustard and red onion for extra piquancy.
Recipe Ingredients
- 4 tablespoon lemon juice
- 4 tablespoon SPAR olive oil
- 1 SPAR Freshline garlic clove, minced
- 2 teaspoon SPAR Dijon mustard
- 2 teaspoons salt, divided
- 1/4 teaspoon black pepper
- 900g SPAR Freshline potatoes, quartered
- 200g SPAR Freshline green beans, trimmed and halved
- 1 small SPAR Freshline red onion, thinly sliced
- 4 tablespoon SPAR sour cream
- 2 tablespoon SPAR Freshline chives, chopped
- Red chilli flakes, to taste
Recipe Method
- In a large bowl, whisk together the lemon juice, olive oil, garlic, mustard, 1 teaspoon of salt and pepper. Set aside.
- Place the potatoes in a large pot and cover with cold water.
- Stir in 1 teaspoon salt.
- Bring to a boil and cook until soft, 10 - 15 minutes.
- Drain the potatoes and place into lemon mixture and coat well.
- Refill the pot with water and bring it to a boil.
- Prepare a bowl of iced water nearby.
- Drop the green beans into the boiling water and cook for 2 minutes.
- Drain and immediately place into the iced water.
- After 1 minute, drain and place on a kitchen towel to dry.
- Add beans and onions into potatoes and toss well.
- Season, to taste.
- Transfer to a platter.
- Top with the red onions.
- In a small bowl mix the sour cream with 1 tablespoon of the chopped chives.
- Drizzle over the salad and sprinkle with the rest of the chives, chilli flakes and black pepper.
